1 pkg. mild or hot Colaianni Italian sausage (4-6 tubes)
1 large green pepper, cleaned & sliced into strips
1 medium zucchini, sliced
1/2 onion, chopped
4 to 5 red potatoes, peeled & chopped into quarters
1 C baby carrots, peeled
1 TBS olive oil
2 TBS minced garlic
1 TBS minced parsley
1 large can diced or stewed tomatoes (with juice)
Salt & black pepper to taste
Partially freeze sausage before cutting into bite-sized pieces. Place olive oil and garlic into a skillet; sauté over medium heat for a few minutes. Add sausage; cook and stir until browned. Add vegetables and diced tomatoes with juice. Then add parsley, salt and black pepper. If necessary, add water until the dish has the consistency of stew. Cover and simmer for about one hour, or until the potatoes and carrots are tender. Stir frequently while simmering. Serve hot.
