1 egg
1 stick butter, softened
1 C sugar
2 C self-rising flour
1 C milk
1 tsp. vanilla extract
2 C fresh or thawed frozen berries (huckleberries or blueberries)
Preheat oven to 350-degrees F. In a large bowl, cream together egg, butter and sugar. Stir in flour, milk and vanilla. Sprinkle berries with extra flour before adding them to batter (which prevents berries from sinking to the bottom). Pour batter into a greased loaf pan; bake for about forty minutes. Allow bread to cool before slicing and serving.
