1-1/2 C butter (3 sticks), softened
2 C granulated sugar
3 eggs
3 TBS bourbon or rum (sub with milk for non-alcoholic version)
4 C flour
1 tsp. each cinnamon, cloves & nutmeg
1 tsp. baking soda
1 C nuts, chopped (peanuts, pecans or walnuts)
1 C raisins, chopped
1 C currants or dates, chopped
Nonstick cooking spray or parchment paper
Preheat oven to 350-degrees F. In a large bowl, mix together softened butter and sugar until creamy. Add eggs, one at a time, mixing well. Stir in bourbon or rum or milk. Add flour, cinnamon, cloves, nutmeg and baking soda. Stir in chopped nuts, raisins and currants or dates. Drop by spoonful onto cookie sheet lined with nonstick cooking spray or parchment paper. Bake for about eight to ten minutes. Store unused portions in an air-tight container or sealable plastic bag.
