4 eggs, beaten
1-2/3 C flour
2-1/2 tsp. baking powder
1/3 C olive oil
2 TBS butter, melted
1/2 C dry white wine
1-1/2 C pitted green olives
2 C Swiss cheese
1/4 tsp. salt
1/4 tsp. black pepper
Beat the eggs in a bowl until lemon-colored. Stir in the flour, baking powder, olive oil, melted butter and the wine; add more wine later if the loaf seems dry before baking and mix again. Chop ham, cube the cheese and slice the olives; stir into the mixture with salt and black pepper. Pour into a greased baking dish or cake pan; bake for about fifty minutes in a 425-degree F oven. Serve warm or cold.
