Cheese Puffs
1 C water
8 TBS butter, cut into 1/2" pieces
1/2 tsp. salt
1 C flour
4 large eggs
1-1/2 C Gruyere cheese, shredded
3 TBS Parmesan cheese, grated
1/8 tsp. nutmeg
1/4 tsp. black pepper
Parchment paper
Preheat oven to 375-degrees F. Line two baking sheets with parchment paper. In a large saucepan, bring water, butter and salt to a boil. When butter is melted, add flour. Stir mixture until a sticky dough ball forms and begins pulling away from sides of pan, about thirty seconds. Reduce heat to low-medium; cook, stirring constantly, for about ninety seconds. Remove from heat and set aside for five minutes. Beat in eggs one at a time, along with the cheeses and seasonings. Shape mixture into balls or place heaping teaspoonfuls onto prepared baking sheets, 1" apart. Bake, rotating sheets halfway through, for about twenty-five to thirty minutes. Gougeres will be puffed when done, and golden brown in color. Recipe makes ten servings.
