Irish Potato Bread

Cook potatoes in a pot of boiling water or in microwave until tender. Allow to cool before peeling. In a bowl, mash potatoes. Add egg, butter, flour, salt and black pepper. Shape mixture into 1" rounds, adding more flour if necessary. Drizzle olive oil into a skillet. Add bacon fat and melt over medium heat. Fry shaped Fadge until crisp and golden on one side. Using a spatula, flip Fadge over and cook other side for about four to five minutes. Serve hot with extra butter.
