Irish Potato Bread
2 LBS leftover mashed potatoes (approximately 4 C)
1 egg
3 TBS flour
Salt & black pepper to taste
Olive oil
Bacon fat (approximately 1 TBS, or more if desired)
In a bowl, mix together mashed potatoes, egg, butter, flour, salt and black pepper. Shape mixture into 1" rounds, adding more flour if necessary. Drizzle olive oil into a skillet. Add bacon fat and melt over medium heat. Fry shaped Fadge until crisp and golden on one side. Using a spatula, flip Fadge over and cook other side for about four to five minutes. Serve hot with extra butter.
