Christmas Anise Cookies
4 eggs
2 C powdered sugar
Pinch of salt
1-1/2 TBS anise
1 TBS Kirsch (cherry brandy)
2-1/2 to 3 C flour
In a bowl, thoroughly mix together eggs, powdered sugar, salt, anise and Kirsch. Add flour; mix to form a dough. Form dough into rolls about 1/2-inch in diameter; cut into pieces about two inches long. Cut each roll on an angle about three times; bend rolls slightly. Set rolls on lightly greased baking sheets; allow to dry for twenty-four to forty-eight hours out of any drafts. Preheat oven to 300-degrees F. Bake cookies for about twenty-five minutes; allow to cool before serving.
Variations: If preferred, cut dough with holiday cookie cutter shapes instead of forming rolls. Bake for the same amount of time.
