Also known as "Poundies"
1 to 1-1/2 LBS mashed potatoes (or use leftovers)
1 bunch of green onions, sliced (or use chives)
4 to 5 pats of butter
Salt & black pepper to taste
Dash of nutmeg
Bring the milk to a simmer in a saucepan with the onions. Add mixture to the cooked mashed potatoes; season to taste with salt and black pepper. Add butter and nutmeg; mix well. Spoon the potatoes into a bowl, and make a small well in the top middle. Put additional butter in the well, and serve.
Trivia Note: The word champ has also been adopted into a popular Irish phrase - to be "as thick as champ," meaning to be stupid.
