Christmas Brownies
1/2 C sugar
Pinch of salt
1 C ground almonds
1/2 tsp. ground cinnamon
Pinch of ground cloves
2 TBS flour
2 egg whites
1/2 C dark chocolate, chopped & melted
Hot water
2 tsp. Kirsch (cherry brandy)
Parchment baking paper
In a bowl, mix together salt, almonds, cinnamon, ground cloves, cocoa powder and flour. Add 1 egg white; mix until thoroughly combined. Chop the dark chocolate into small pieces; place in a glass bowl. Pour enough hot water over chocolate to cover; set aside for about five minutes. Drain excess water except for one tablespoon; stir chocolate until smooth. Add melted chocolate and Kirsch to the dough mixture; stir to combine. Turn onto a lightly-floured work surface; knead until smooth. Roll dough to 1/2-inch thickness; dust flour if necessary. Use holiday cookie cutters to cut the dough into various shapes; transfer to a greased baking sheet lined with parchment paper. Set aside to rest in a dry place overnight. Next day, preheat oven to 400-degrees F. Bake Brunsli for about five minutes, or until cooked through and lightly browned on top. Allow to cool on baking sheet for about ten minutes; transfer to a wire rack to cool completely before serving or storing.
Note: Brunsli are typically served during the Christmas holiday in Switzerland.
