Baked Zucchini
1 large zucchini (or use leftover from garden)
3 eggs, beaten
1 tsp. dried basil
1 tsp. garlic powder
1 C cornmeal
Non-stick cooking spray
Slice zucchini, leaving skin on. In a bowl, combine beaten egg with basil and garlic. Dredge the zucchini slices in egg mixture, then coat with cornmeal. Arrange the zucchini slices on a cookie sheet coated with non-stick cooking spray. Bake at 375-degrees F for about thirty minutes. Serve warm.
