Classic
1 dozen eggs, scrambled
1 LB bacon, chopped, cooked & drained
1 LB hot sausage, fried & drained
2 large potatoes cooked in the microwave, peeled & shredded
1/2 small onion, chopped
1 small can mild green chilies
12 large flour tortillas
Shredded cheddar cheese
Salsa (optional)
In a skillet, cook sausage, bacon and onion together. Drain and return to skillet. Add beaten eggs and cook until set. Pour in green chilies and shredded potatoes; heat thoroughly. On a griddle, warm large flour tortillas. Fill tortillas with a soup ladle amount of filling; add cheddar cheese to taste. Roll tortillas into burrito shapes; wrap in foil or eat immediately. Top with salsa if desired.
