2 LBS lean stewing beef
2 large onions, sliced
6 medium carrots, sliced
2 TBS flour
Fat or beef drippings
1/2 C dry cider
1 C Guinness with water
Sprig of parsley
Cut the beef into chunks; peel and slice onions and carrots. Toss the beef in flour. In a skillet, brown the beef quickly in hot fat. Remove beef and gently fry onions until transparent.
Return beef to the skillet, adding carrots and the liquid. Bring to a boil; reduce heat to a gentle simmer. Cover and cook for ninety minutes to two hours. Check that the dish does not dry out, adding more liquid if necessary. Sprinkle with chopped parsley and serve with plainly boiled potatoes. Serves four.
