Sudanese lemon cake
5 eggs
1 C powdered sugar
3/4 C vegetable oil
1 tsp. vanilla extract
2 C plain yogurt
2 C flour, sifted
2 tsp. baking powder
1 C shredded coconut
Glaze for Baseema:
1-1/2 C granulated sugar
1 TBS lemon juice
1 C water
Preheat oven to 400-degrees F. In a bowl, beat together eggs and powdered sugar. Add vegetable oil, vanilla extract and yogurt; mix well. In a separate bowl, combine sifted flour, baking powder and coconut. Add to egg and sugar mixture, stirring to blend. Spread mixture into a greased baking dish; bake for about thirty minutes. Remove from oven and allow to cool; poke holes in top of cake using a fork.
Glaze: In a saucepan, mix granulated sugar and lemon juice with water; bring to a boil and stir until mixture thickens. Pour syrup over cake evenly so that it soaks into holes. Cut cake into squares; remove from baking dish and serve.
