1 jar (6.5 oz.) marinated artichoke hearts, drained & chopped
1/2 C Romano cheese, grated
1/3 C red onion, finely chopped
5 TBS mayonnaise
1 fresh or slightly stale leftover baguette loaf, cut into 1/3" thick slices
Preheat broiler. In a bowl, mix marinated artichoke hearts, Romano cheese, red onion and mayonnaise. Top baguette slices with equal amounts of artichoke heart mixture. Arrange slices in a single layer on a large baking sheet. Broil in preheated oven for two minutes, or until top is bubbly and lightly browned. Serve.
