Amber Day Tart
3 small onions, chopped
2 bunches of parsley, chopped
1 C cheddar cheese, shredded (sub with 1/2 C unseasoned bread crumbs)
8 eggs, beaten
1 TBS butter, melted
1/8 tsp. saffron
1/2 tsp. salt
1/4 C currants
1/4 tsp. sugar
1/8 tsp. cloves
1/8 tsp. mace
1 nine-inch pie shell
Optional spices: 1/2 tsp. each of sage, basil and thyme
In a cooking pot, parboil or sauté onions and parsley; drain well. Mix with all other ingredients in a large bowl. Place mixture into a nine-inch pie shell. Bake at 350-degrees F for about thirty-five or forty minutes, or until pastry is golden brown and filling is set.
