Cypriot wine-marinated pork

Strip meat from pork spareribs; discard bones. Cut meat into bite-sized pieces and place in a bowl. Add crushed coriander seeds and red wine; cover and refrigerate for up to six hours. After marinade time, remove pork with a slotted spoon but reserve marinade mixture. Pour corn oil into a medium skillet; add pork. Cook and stir until pork is browned. Stir in reserved marinade mixture. Bring to a boil; pour in just enough hot water to cover meat and season with salt and black pepper to taste. Cook over low heat, covered, for about sixty minutes or until the pork is tender.

 

Suggestions: Serve hot with rice pilaf and sauce poured over meat, or serve with boiled potatoes or vegetables.
