There are literally hundreds of tea sandwich variations to choose from. Better yet, create one of your own!
Tea Sandwich Variations from Glenbrook Farms:
Start with dense, high-quality breads like pumpernickel, rye, or whole wheat sliced thinly. Assemble tea sandwiches and store in the refrigerator. Arrange on a serving platter when ready to serve, and use flowers or cut herbs to garnish. The bread suggestions above and the wonderful sandwich ideas below come courtesy of Glenbrook Farms.
Apricot Ham Finger Sandwich: Mix three parts of cream cheese with one part apricot preserves. Spread the mixture on a bread slice, and top with thinly-sliced ham. Garnish with 1/4 sliver dried apricot. Try substituting cherry preserves in place of the apricot.
Celery-Nut: Whip a soft block of cream cheese with 1/4 cup of milk. Add 1/2 cup of celery and 1/2 cup of chopped walnuts. Spread the mixture on whole wheat bread to serve.
Cranberry Fingers: Mix Dijon mustard in whole cranberry sauce, and flavor to taste. Spread on a slice of bread and then add a small slice of smoked turkey; add a top layer of bread.
Cucumber Sandwich Variation: Mix seasoned salt into a portion of butter, and then spread on a bread of choice. Add thinly-sliced cucumbers after drying them with with paper towels. Top with a small spring of parsley.
Lavender Egg Salad: Chop up four hard-boiled eggs, mix in one ounce of mayonnaise, and one ounce of plain yogurt. Add one teaspoon of curry powder, and one tablespoon of dried lavender buds. Spread on bread slices and top with a green olive.
Pineapple Cream: Thin a block of cream cheese with 1/4 cup of milk, and then add one cup finely chopped pineapple and spread on Boston Brown Bread.
Salmon & Dill: Spread buttered bread with softened cream cheese that has been flavored with dill. Place a thinly-cut piece of salmon or lox on the cream cheese, and garnish with a small fresh sprig of dill.
Spring Radish: Butter slices of pumpernickel bread, and add thinly-sliced radishes; another slice of bread, and then more radishes.
Other Tea Sandwich Variations:
Mix cream cheese with chutney and grated orange peel. Spread between slices of date-nut bread.
Mince purchased chicken salad; add finely chopped water chestnuts and cilantro. Spread between thin slices of whole wheat bread.
Add curry powder, chopped golden raisins, and chopped chives to your favorite tuna salad. Spread between thin slices of pumpernickel.
Mash Stilton cheese and cream cheese, chopped smoked almonds, and a few tablespoons of Port. Spread on brown bread and cut into "fingers." Another variation used could be ricotta cheese.
Mix grated sharp cheddar cheese, purchased chopped pimientos, and mayonnaise. Spread on slices of whole wheat bread and top with slices of white. Alternate with mozzarella cheese as well.
Spread white bread with mayonnaise, and add paper-thin slices of sweet onion. Top each with another bread slice and cut sandwiches into 1-1/2" rounds. Spread the edge with mayonnaise, and then roll in finely chopped parsley.
Mix softened cream cheese with chopped pimiento-stuffed green olives and crushed toasted walnuts. Use white or brown bread.
Mash a ripe avocado and spread it on an oven-toasted plain or flavored bagel, with a dash of salt and lemon. For a bit of flash, mix slivered almonds in with the mashed avocado before spreading on bagels. (Avocado Tea Sandwiches).
Try any of the following mascarpone-based sweet fillings on crustless white bread: mascarpone, Nutella and powdered sugar; mascarpone, strawberry jam, orange marmalade and rum extract; or mascarpone, pecans and honey.
