Holiday Mentions

I tried a few new foody things over the holiday season:

Campbell's Chunky Chili: Not highly recommended. The Grilled Steak variety was sickly sweet, but the Roadhouse version was much better. Still, I think I'll stick with Nalley's Chili or the brand produced by Fred Meyer (Kroger).

Hot Dog Toaster - NOT recommended!

Hot Dog Toaster: The idea is brilliant, but the design is dreadful. I gave the toaster to Wilbert for Christmas, and he seemed thrilled. However, when used the contraption the frankfurters swelled and got stuck in the cooking tray. Another time hot dogs did not pop-up automatically when cooked, and eventually came out burned. Needless to say, I'm returning the item for credit.

On Christmas Eve, I baked a large ham and prepared roasted vegetables. I used a glaze on the ham originated by Mum's cousin, Jackie Daigle. The combination adds a wonderful flavor to the ham. The ingredient measurements will depend on the size of the ham. I use my eye to measure for the most part.

The following roasted vegetable recipe is from Women's World Magazine. I liked the texture and taste of the finished dish so well I'll probably use the method again with a combination of other vegetables. I changed the ingredient amounts slightly to suit our own tastes, but you'll get the general gist.

Roasted Vegetable Medley

1-2 bunches broccoli, cut into florets

1 small cauliflower, cut into florets

1/2 LB fresh green beans, ends snipped & rinsed

1 C mini carrots, peeled

3 TBS olive oil

Celery salt to taste

Black pepper to taste

1 TBS grated lemon zest or lemon juice

Nonstick cooking spray

Preheat oven to 350-degrees F. Coat a cookie sheet or roasting tray with nonstick cooking spray. In a large bowl, toss first seven ingredients until well-coated with oil and seasonings. Arrange vegetables in a single layer on cookie sheet. Roast vegetables, stirring occasionally, until tender (about thirty minutes). Toss with lemon zest or lemon juice and serve.

New Years Eve will be simpler: ham and beans along with stuffed mushrooms and an assortment of other appetizers. We're not having or going to a party, but I'd still like to bring in 2007 with a bit of style. Watching The Twilight Zone marathon will surely help me along.

Happy New Year!
