A yummy breakfast/brunch recipe from Country Door:

Baked French Toast

1 loaf of French bread

3 eggs

1 C half and half

1 C milk

1 TBS vanilla

1 tsp. nutmeg

1 tsp. cinnamon

Nonstick cooking spray

Cut the French bread in to 1-1/2" slices; place in a baking dish coated with a nonstick spray. Mix all of the above ingredients in a large bowl (until fluffy); pour over bread evenly. Cover with plastic wrap and refrigerate overnight.

Topping:

1/2 C brown sugar

1 TBS corn syrup

1/2 C chopped nuts

1/2 stick butter (1/4 C)

Mix all the ingredients well. Refrigerate. The following morning, thaw out the topping or place in the microwave for thirty seconds to soften. Spread over each piece of French bread, preheat oven to 350-degrees F and bake for forty minutes. Serve hot with pure maple syrup.

Last weekend, I also baked several batches of Classic Shortbread. The recipe is one of the easiest I've ever assembled, although to get the true representation you'll need a ceramic shortbread pan from Gael Song.
