Turkey Sustenance

Wilbert and I have eating leftover turkey for three days, and there seems to be no end in sight. I would love to be able to freeze some of the meat, but our freezer is rather small. While I've been intending to purchase a freezer unit we could place in our pantry, it has not become a reality yet. In the interim, we are trying to think of inventive ways to prepare our meals with the poultry.

 

First it was simply leftover turkey with all the fixings, and then it was turkey salad sandwiches with mayonnaise, bits of onion and celery, and cranberry sauce spread on bread. Today I decided I wanted something different, so I prepared an actual salad: plain turkey chopped into bite-sized pieces on a bed of lettuce, sliced black olives, cubed mozzarella cheese and Ranch Dressing. The salad was scrumptious, made even better because the lettuce I used was from near the core of the iceberg head (small, tender "shoots" which are well worth wading through the outer leaves to obtain).

 

We also have a large amount of leftover mashed potatoes (the Klondike Rose variety with skins on). Eating them as is became boring as well. Yesterday I placed a large spoonful in a small bowl, covered it with a napkin and micro-waved the dish for about ninety seconds. Afterward, there was a nice crust on top with all of the buttery spuds underneath. It was more like a dessert for me because I'm such a potato lover.

 

What about tomorrow? Turkey soup may be in order, along with turkey pitas and perhaps more crusty mashed potatoes. We'll get rid of the lot sooner or later. Foofer is also a big fan of the bird. He's had his fair share and then some to boot.

 

*POSTSCRIPT (Bird Be Gone, Thu, 12/04/03): The last of the leftover turkey is almost gone, and just in the nick of time. I was definitely out of appealing ways in which to prepare the bird remnants. Yesterday for lunch I took several slices of turkey and melted provolone cheese on top; then I spread mayonnaise on toast and had my hot sandwich with potato chips and spicy guacamole dip as a side. At this point, I'd rather feed what's left to the literal birds (would they eat their own kin?) and be done with it. For Christmas, I'm already planning to cook a big ham with sausage and hazelnut stuffing – with no turkey related dishes on the menu.
