Sunday dinner...and pardon my awful food photography...

 

Italian Sausage Stew

 

Italian Sausage Stew

1 pkg. Colaianni Italian sausage (4-6 tubes)

1 large green pepper, cleaned & sliced into strips

1 medium zucchini, sliced

1/2 onion, chopped

4 to 5 red potatoes, peeled & chopped into quarters

1 TBS olive oil

2 TBS minced garlic

1 TBS minced parsley

1 large can diced or stewed tomatoes (with juice)

Salt & black pepper to taste

 

Partially freeze sausage before cutting into bite-sized pieces. Place olive oil and garlic into a skillet; sauté over medium heat for a few minutes. Add sausage; cook and stir until browned. Add vegetables and diced tomatoes with juice. Then add parsley, salt and black pepper. If necessary, add water until the dish has the consistency of stew. Cover and simmer for about one hour, or until the potatoes are tender. Stir frequently while simmering. Serve hot.

Italian Sausage Stew is one of the many dishes I learned from my second husband. The only change I made this time was to add sliced zucchini.
