Soccer Bars

I found the following recipe on a bag of Western Family flour:

 

Scott's Soccer Practice Bars

1/2 C butter

1/2 C brown sugar

1/2 C sugar

1 egg

1/3 C peanut butter

1/2 tsp. baking soda

1/2 tsp. salt

1 C flour

1 C oatmeal

1 C semi-sweet chocolate chips

 

Icing (combine & set aside)

1/2 C powdered sugar

2 TBS peanut butter

2 TBS milk

 

Preheat the oven to 350-degrees F. Cream butter and sugars. Add egg and peanut butter and mix well. Stir in soda, salt, flour and oatmeal. Press into a 9" x 13" baking pan. Sprinkle chocolate chips over top. Bake 20-25 minutes or until golden brown. Remove from oven and drizzle with icing. Cool completely. Cut into squares and serve. Makes 24 squares.

The recipe couldn't be simpler to prepare. However, because I'm not a "sweet tooth" like most people, I cut all three sugars down to 1/4 cup rather than 1/2 cup. The recipe still works with less sugar, and the bars taste just as good.
