Bear Creek Soup

Last Sunday for dinner I tried Creamy Wild Rice Soup from Bear Creek Foods. I have to admit I was pleasantly surprised. The soup was rich, with plenty of rice and vegetables. Initially I thought the price was a bit steep ($3.49 for a 10.2-ounce package), but after eating it I changed my tune. I toasted French bread with butter to accompany the soup, which made for a satisfying meal. I'd like to try the others as well.

The wild rice flavor gave me ideas to add chunks of chicken or fresh peas. It was also easy to prepare: simply whisk the mix into eight cups of boiling water, and then simmer on medium heat for ten to fifteen minutes.

 

I did some investigating and found the Bear Creek Foods web site, and lo and behold the company is located in Heber City, Utah. Ironically, my father grew up in Heber and now lives about forty miles away near Salt Lake City. Bear Creek also produces dip mixes and entrees, and they offer a few recipes. I pinched the bit about their history from the web site, and it's like a homegrown tale:

 

Bear Creek Country Kitchen was founded by Don and Sheila White in 1991 when word-of-mouth made Shelia's homemade English Wassail recipe a local favorite. Don and Sheila later added several dry mix soups that tasted "made from scratch" to the growing list of products, and what began as a weekend enterprise blossomed into a full-time business. Today, more than 60 tried and true mixes from soups and breads to cakes and dip mixes, pepper our product line.

 

Quality of taste and superior service has earned the company an enviable reputation and a wide following of loyal customers. Though proud of our position in the marketplace, our true success is measured by the friends we have made and the dedicated customers who continue to flatter us each time they ask for seconds.

 

Bear Creek's recipes have won awards from coast to coast, and the company is proud to be a member of the National Association for the Specialty Food Trade (NASFT), an organization that accepts only the most prestigious companies in the gourmet food industry. Bear Creek Country Kitchen is still family owned and family run today.

The soup is highly recommended if you can find it where you live. I reside in the Inland Northwest, so the mix is as common as other soups on the shelf.
