Italian Sausage Sandwich Variation

One of my favorite lunches is an Italian Sausage Sandwich, but only if they are made very well. Most variations of the sandwich contain tomato sauce, but there are times when I'd rather not have the sauce. A few days ago I came up with the following variation of one of my favorite sandwiches:

 

Italian Sausage Sandwich (variation)

Olive oil

2 large Italian sausage links

1 onion, sliced into rings

1 small yellow pepper. sliced

2 thin slices of mozzarella or provolone cheese

Prepared mustard to taste

1 French-style roll

 

Drizzle a small amount of olive oil in a skillet; warm over medium-low heat. Add sausage links. Cook until lightly browned on all sides, turning frequently. Add sliced onion; cook with sausage until tender and translucent. Drain cooked sausage and onion. Split French-style roll lengthwise without cutting through opposite side. Hollow out bun slightly. Spread with prepared mustard to taste. Halve cheese slices lengthwise. Place a piece of cheese on bottom half of each roll. Cut sausage links in half; place evenly on the roll. Place remaining cheese atop meat; add cooked onion and sliced yellow pepper. Close rolls. Slice roll in half and serve. Recipe makes enough for one serving.

You can use mild or hot Italian sausage for the sandwich, whichever one suits your fancy. Simply and sinfully delicious!
