Picnic Grub for Good

The Barretstown Camp Fund was established by the late Paul Newman in 1984. Per their web site:

 

Barretstown is a specially-designed camp that provides Therapeutic Recreation programs for children with serious illnesses, and their families. The excellent, unobtrusive medical supervision helps children with cancer and other diseases forget illness, learn to have fun and rebuild their confidence and self-esteem.

The Avonmore Big Picnic was held last month at various locations throughout Ireland. Here's one of the recipes suggested for the event listed at their web site:

 

Potato & French Bean Salad

Recipe by Barry Foley, Avonmore Chef

 

1 small bag baby potatoes

1 chicken stock cube

1 bunch French beans

1 shallot, finely diced

3 TBS mayonnaise

1 tsp. Dijon Mustard

Salt & freshly ground black pepper

 

Add the potatoes to a saucepan, cover with water, add the chicken stock cube and cook for twenty to thirty minutes until soft through. Remove from the water and allow to cool. Meanwhile, cut the French beans in two and blanch in boiling salted water for five minutes and then refresh in a pot of iced water. Remove from the water and pat dry. Cut the potatoes in half lengthwise. Combine all of the ingredients together in a large bowl and season to taste with salt and black pepper. Serve.

It's a simple yet delicious dish, and used in the spirit of a good cause.
