Mushroom Mashed Potatoes

We barbequed chicken yesterday. Ay the last minute, I made mashed potatoes as a side dish. I wanted to try something a bit different, so using my new blender I concocted the following recipe:

 

Mushroom Mashed Potatoes

6 large white or russet potatoes

3 TBS butter

1/4 C to 1/2 C of liquid Coffee Mate

Salt & black pepper to taste

1/2 C (about 7 medium) mushrooms, cleaned & sliced

 

Scrub potatoes clean; make small slits in the tops to prepare for microwave. Cook in the microwave until potatoes are tender; cooking times may vary. Leaving the skins on, slice potatoes lengthwise; then cut crossways into small pieces. Place the pieces in a large mixing bowl. Using a hand mixer, blend the potatoes with two tablespoons of butter, liquid Coffee Mate, salt and black pepper. Clean and slice the mushrooms. In a small saucepan, sauté the mushrooms with one tablespoon of butter; cook until soft. Spoon mushrooms over the mashed potatoes. Heat in microwave for one minute or more, and then serve..

The mushrooms seem to blend in with the potato skins, and the marriage of flavors was marvelous.
