Cups of Ham

The other day Wilbert bought a huge ham on sale, and I've been trying to think of ways to use it up. Today's lunch consisted of cubed ham mixed with white sticky rice and a dash of teriyaki sauce. Other ideas include ham fried rice, stir fry variations, sandwiches, ham omelets, potatoes and ham, ham and bean soup and chef salads.

 

I'm also going to prepare the following recipe sometime this weekend or perhaps next week - another winner from Campbell's Kitchen:

 

Ham & Pasta Skillet

1 can (10-3/4 oz.) Campbell's Broccoli Cheese Soup

1 C milk

1 TBS spicy brown mustard

2 C broccoli flowerets or 1 pkg. (10 oz.) frozen broccoli cuts

1-1/2 C cooked ham strips

3 C cooked medium shell pasta

 

Mix the soup, milk, mustard and broccoli in skillet. Heat to a boil; cover over low heat for five minutes, or until broccoli is tender. Add the ham and pasta and heat through. Serves four.

Then there is always ground ham as in a meat loaf of sorts, and maybe some bites for Foofer and Rainee. My cup runeth over . . .
