Memorial Day Barbeque

Posted Mon, 05/30/05

We had a nice relaxed afternoon on this holiday. My husband barbequed a large package of chicken thighs and drumsticks, and I prepared corn-on-the-cob and chicken stuffing. While my husband ate the stuffing, I had Shrimp Salad.

I love the way Wilbert seasons the chicken, so I pried the ingredients out of him:

Grilled Chicken Seasoning Mix

1/4 C paprika

2 TBS cinnamon

1 TBS ginger

3 TBS parsley flakes

3 TBS sage

1 TBS garlic pepper

1 tsp. black pepper

Combine ingredients in a bowl; store in a sealable container in a dry place. For use on chicken or other grilled meats.

Keep in mind the above amounts are for two large packages of thighs and drumsticks (see Grilled Paprika Chicken). Wilbert liberally spread the mixture all over the meat and let it stand for about thirty minutes before throwing them on the grill. It's a delicious combination. The skin was lightly crispy and the meat was tender. We have enough leftover for several meals.

Never fear, Foofer and Rainee had their fair share as well.
