Irish Delights

Every week I receive a newsletter from Irish Abroad, a wonderful source of information about all things Irish. Most of the time the newsletter doesn't include references to food, but if you browse their web site you'll find an entire page is devoted to Irish recipes.

 

I chose two which sounded simple and tasty – especially the spice bread, which I plan to make on Sunday afternoon.

 

Spice Bread (Aran Spiosral)

10 oz. flour

2 tsp. baking powder

1/2 tsp. baking soda

1 tsp. mixed spice

1/2 tsp. ground ginger

4 oz. light brown sugar

2 oz. candied Citron, chopped (orange peel)

6 oz. raisins, plain or golden

4 oz. butter

6 oz. golden syrup

1 large egg, beaten

4 TBS milk

 

In a bowl, sift the flour with the soda and baking powder; add mixed spice and ginger. Add the brown sugar, chopped peel and raisins. Mix well. Make a well in the center. In a saucepan, melt butter with the syrup over low heat; pour into well in the flour mixture. Add the beaten egg and milk; mix well. Pour into a greased 2-pound loaf pan; bake in a pre-heated oven at 325-degrees F for forty to fifty minutes, or until a toothpick inserted into the middle comes out dry and clean. Note: Irish "mixed spice" comes pre-packaged from specialty stores, but it might be easier and less expensive to make your own: Grind together one small cinnamon stick and one tablespoon each cloves, mace, ground nutmeg, coriander seeds and allspice berries. Substitute with pumpkin pie spice or allspice. Source: Spice Bread is a variation of Barm Brack.

The other "Irish delight" is a beverage treat:

 

Cream Delight

2/3 C uncooked oatmeal

1/3 C slivered almonds

1-1/4 C heavy or whipping cream

5 TBS honey (or to taste)

4 TBS Irish whiskey

1 tsp. lemon juice

 

Spread oatmeal and slivered almonds on a baking sheet; bake at 300-degrees F for five to ten minutes, stirring frequently. Place cream in a bowl; stir in the honey and whiskey. Fold in the almonds and oatmeal. Stir in lemon juice. Divide into individual long-stemmed glasses. Serve at room temperature.

I'm allergic to honey so I would likely eliminate it from the ingredients. Adding whiskey is a personal choice as well, although I don't see the point of making the drink without it.
