Ways with Fish

Posted Mon, 04/03/06

My husband is not a big lover of fish, although he will eat battered and deep-fried white fish, tuna and salmon loaf. I love most seafood, and thought the following recipe could also be prepared using salmon or tuna:

Old Bay Crab Cakes

2 slices white bread, crusts removed

2 TBS mayonnaise

2 tsp. Old Bay Seasoning

2 tsp. McCormick Parsley Flakes

1/2 tsp. prepared yellow mustard

1 egg, beaten

1 LB fresh lump crabmeat

Break bread into small pieces; place in a bowl. Mix in mayonnaise, Old Bay Seasoning, parsley flakes, prepared mustard and beaten egg. Stir in crabmeat. Shape mixture into patties. Broil for ten minutes without turning, or fry until golden-brown on both sides. Serve warm.

The recipe and spices are from McCormick.
