Vegetable Rice Pilaf
1/4 C green or red pepper, chopped
2 cloves garlic, minced
1/2 tsp. dried basil leaves, crushed
1/8 tsp. black pepper
1 C uncooked regular long-grain white rice
1 can chicken broth (about 1/2 cup)
3/4 C frozen mixed vegetables
Non-stick vegetable cooking spray
Spray a skillet with vegetable cooking spray and heat for one minute. Add green pepper, garlic, basil, black pepper and rice. Cook and stir until rice is browned and green pepper is tender-crisp. Stir in the broth and heat to boiling. Cover and cook over low heat ten minutes. Stir in the vegetables. Cover and cook ten minutes, or until rice is done and most of liquid is absorbed. Serve.
