12 whole chicken wings (about 3 LBS)
1 TBS chili powder
1 TBS garlic, minced
1 tsp. cayenne red pepper
6 TBS lime juice, divided
6 TBS canned chipotle peppers in adobo sauce, chopped & divided
2/3 C barbecue sauce
Nonstick cooking spray
1 C sour cream
1 green onion, sliced
2 tsp. lime zest
Rinse chicken wings under cold water (remove excess fat if desired); place in a large shallow dish. In a bowl, mix together chili powder, minced garlic, cayenne pepper, five tablespoons of lime juice and five tablespoons of chopped chipotle peppers until well blended. Pour mixture over chicken wings; turn to evenly coat both sides of wings. Refrigerate for about thirty minutes to marinate, turning wings after fifteen minutes. In a bowl, mix together remaining chopped chipotle peppers and barbecue sauce until well blended. Heat oven to 400-degrees F. Remove wings from marinade; place in single layer on a cookie sheet coated with nonstick cooking spray. Discard marinade. Bake wings for thirty-five to forty minutes, turning after twenty minutes, or until wings are done. Brush wings with half the barbecue sauce mixture; bake an additional five minutes, turning and brushing with remaining barbecue sauce mixture after three minutes. In a bowl, combine sour cream, sliced green onions, lime zest and remaining lime juice. Serve with the wings. Recipe makes about twelve servings.
