Cheese Tart
1-3/4 C flour
8 TBS cold butter, cut into pieces
1 tsp. salt
2 TBS cold water
2/3 C goat cheese, crumbled
1/2 C bleu cheese, crumbled
Plastic wrap
Preheat oven to 400-degrees F. In a food processor, pulse flour, butter and salt until it resembles a coarse, sandy texture with pea-sized pieces of butter. Stir cold water into flour mixture until dough pulls together into a ball. Wrap dough in plastic wrap and refrigerate for up to two hours, or until cold.
Divide dough in half and roll each piece into 4" by 6" oval shape, forming slight edges. Place on a lightly greased baking sheet. Spread crumbled cheeses over the surface of the dough. Bake cheese tarts for twelve to eighteen minutes, or until dough is golden brown and cheese turns brown and bubbly. Recipe makes four to six servings.
