Swedish Waffles
4 TBS butter
2 eggs
2-1/2 C milk
2 C flour
Dash of salt
Melt butter in a saucepan over low heat; set aside to cool. In a medium bowl, beat eggs well. Add flour and half the milk. Pour in the remaining milk, salt and melted butter. Preheat a waffle iron; grease with a little butter or nonstick cooking spray. Use about 2/3 cups of batter for each waffle; cook until golden. Serve at once or keep warm while cooking remaining waffles. Recipe makes about seven waffles.
Suggestions: Serve waffles with jam, whipped cream or ice cream.
