Seven-Up Cake

• 3/4 LB butter, softened

• 2 C sugar

• 5 eggs

• 3 C flour

• 2 TBS lemon extract

• 3/4 C 7-Up soda (sub with generic lemon-lime flavored soda)

• Oil (for greasing baking pan)

Lemon Glaze:

• 2/3 C powdered sugar

• 1 TBS lemon juice

Cake: In a bowl, cream together butter and sugar. Add eggs, one at a time, beating after each addition. Add flour and lemon extract. Fold in 7-Up or other lemon-lime flavored soda. Pour mixture into a well-greased 12-cup Bundt pan or tube pan. Bake at 325-degrees F for about one hour and ten minutes. Allow to cool before glazing.

 

Glaze: In a bowl, mix powdered sugar and lemon juice together. When cake is cooled, dribble with lemon glaze.
