Sausage & Tomato Bow-Ties
1 package (12 ounces) bow-tie pasta
2 TBS olive oil or canola oil
1 LB sweet Italian sausage, casings removed & crumbled (sub with turkey sausage)
1/2 tsp. red pepper flakes
1/2 C onion, diced
3 cloves garlic, minced
1 can (28 ounces) Italian-style plum tomatoes, drained & coarsely chopped
1 1/2 C heavy cream (sub with 1 C whole milk)
Salt to taste
3 TBS fresh parsley, minced (sub with dried parsley)
Water
Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for eight to ten minutes, or until (al dente). Drain. Heat the oil in a large, deep skillet over medium heat. Cook sausage and pepper flakes until sausage is evenly brown. Stir in onion and garlic; cook until onion is tender. Stir in tomatoes, cream (or milk) and salt. Simmer until mixture thickens, about eight to ten minutes. Stir cooked pasta into sauce, and heat through. Sprinkle with parsley and serve.
