Sauce Shenanchie
1 C spinach leaves, cleaned & trimmed
1 C basil leaves, cleaned & trimmed
1 C parsley leaves, cleaned & trimmed
1/4 C butter
1/4 C olive oil
1/4 C Romano cheese
1/4 C Parmesan cheese
2 TBS slivered almonds
2 cloves of garlic
Salt & pepper to taste
In a food processor or blender, process the spinach, basil and parsley until the mix is a thick puree (add a bit of water if it becomes too thick). Then add the rest of the ingredients, and blend again. The mixture should have a few specks of the herbs.
Suggestions: Pour over hot-cooked rice or noodles.
