1 LB fresh tomatoes, seeded & chopped
1 jalapeno pepper, ribs & seeds removed, minced
2 TBS red onion, finely chopped
2 TBS cooking oil
2 tsp. lemon or lime juice
1/2 tsp. salt
In a bowl, combine all ingredients; cover and chill. Recipe makes about 1-1/2 cups of salsa. Refrigerate unused portions.
