Algerian creamy winter drink; aka Salep

In a bowl, dissolve cornstarch in water; set aside. In a medium saucepan, bring milk to a boil over low to medium heat. Reduce heat. Stir in sugar; simmer until sugar dissolves (usually no longer than one minute). Slowly pour cornstarch mixture into milk, whisking quickly to prevent milk from sticking to the bottom of saucepan. Stir until the milk thickens. When the milk achieves a consistency of thick gravy, remove saucepan from heat. Pour mixture into glasses or mugs. Sprinkle with raisins, shredded coconut, chopped nuts and cinnamon. Serve hot.

 

Note: Sahleb (also known as salep) is sold in prepared powdered form, available at most Middle Eastern specialty stores. It can also be found on Amazon.
