Food Fare: Scottish RecipesAberdeen Rolls

Also known as Butteries or Rowies

In a bowl, mix together the yeast, sugar and half the water; allow to stand for about fifteen minutes. Sift flour and salt into a large bowl; add yeast mixture. Add enough water to form smooth dough. Transfer dough to a well-floured surface; knead for about five minutes. Place dough back into bowl; cover with a slightly dampened cloth and set aside in a warm place for about an hour (or until dough doubles in size). In a bowl, cream together butter and lard; set aside. When dough has risen, knead again and then roll out on a floured surface. Spread dough with one-third of the butter and lard mixture; sprinkle with flour. Fold dough in three, and then roll it out again. Repeat process two more times. Roll out dough thinly; cut into squares. Bring four corners of each square to the centre, shape into rounds and flatten slightly with hand. Place shaped dough rounds on a floured and slightly warmed baking sheet; allow to stand and rise in a warm place for about thirty to forty minutes. Bake rolls in a 450-degree F oven for about fifteen to twenty minutes or until golden brown in color and crispy in texture on both sides. Recipe makes approximately sixteen rolls.

 

Note: Aberdeen Rolls are considered similar to croissants.
