Roasted Sweet Corn
6 ears sweet corn on the cob, husks & silk removed
Aluminum foil
1/4 pound butter (1 stick)
Salt & black pepper to taste
1/8 tsp. garlic powder
Shuck and clean corn; place cobs on a large square of aluminum foil. . In a saucepan, melt butter; add salt, black pepper and garlic powder. Brush corn with butter mixture; securely wrap corn in foil square. Place corn on a grill, away from overly hot coals. Cook for about fifteen to twenty minutes, turning occasionally. Allow to cool slightly before unwrapping and serving. Alternative cooking method: The seasoned and foil-wrapped corn can also be baked in a 400-degree F oven for about twenty minutes.
