Ricotta Bake
1 C ricotta cheese
1 TBS dried herb mixture: basil, parsley & thyme
Pinch of salt
1 TBS olive oil
Preheat oven to 425-degrees F. Drain water off ricotta if necessary. In a bowl, mix together the ricotta cheese, herb mixture and salt. Pour mixture into a small baking dish. Drizzle olive oil on top. Bake for about twenty minutes. If top doesn't brown, finish the dish by placing it under a broiler for one or two minutes or until browned and bubbly.
Note: Use a fresh herb mixture if available.
