In a bowl, mix together flour, cocoa powder and baking soda. Set aside. In another bowl, beat together butter, cream cheese, sugar, vanilla and food coloring with an electric mixer on medium speed until light and fluffy. Gradually stir in flour mixture on low speed until well mixed. Divide dough into three equal pieces; flatten each into a disk. Wrap in plastic wrap and refrigerate for about two hours, or until firm. Preheat oven to 350-degrees F. Roll out one piece of dough at a time to a 1/8-inch thickness on lightly floured surface. Cut into shapes with 3-inch cookie cutter. Place two inches apart on baking sheets sprayed with nonstick cooking spray. Bake for ten to twelve minutes or until edges are lightly browned; cool on baking sheets for about two minutes. Remove to wire racks; cool completely. Recipe makes about two dozen cookies.
