Moroccan spice mix
1 tsp. salt
1 tsp. ground cumin
1 tsp. ground ginger
1 tsp. ground turmeric
3/4 tsp. ground cinnamon
1/2 tsp. white pepper
1/2 tsp. ground coriander seeds
1/2 tsp. cayenne pepper
1/2 tsp. allspice
1/2 tsp. ground nutmeg
1/4 tsp. ground cloves
Combine all ingredients in a bowl; mix well. Store in a sealable container in a dry place; will keep for up to one month.
Note: Ras el Hanout is used as a meat rub or as a flavoring for rice or other savory dishes, such as Mrouzia (Moroccan salty-sweet tajine).
