2 C milk
4 eggs
3/4 C Biscuit Baking Mix or Jiffy Baking Mix
1/4 C butter, softened
1 C Parmesan cheese, grated (sub with KRAFT or generic dried Parmesan)
1 package (10 ounces) chopped frozen broccoli, thawed & drained
1 C cooked ham or turkey ham, cubed
8 ounces cheddar cheese, shredded
Oil (for greasing quiche dish or pie plate)
Preheat oven to 375-degrees F. Lightly grease a 10-inch quiche dish or glass pie plate. In a large bowl, beat together milk, eggs, baking mix, butter and parmesan cheese. (Note: Batter will be lumpy). Stir in broccoli, ham and cheddar cheese. Pour into prepared quiche dish or glass pie plate. Bake for about fifty minutes, or until eggs are set and top is golden brown. Serve.
DID YOU KNOW? Jiffy Baking Mix is less expensive than the more well-known Bisquick Baking Mix, but works just as well.
