5 to 6 large potatoes, fully cooked with skins removed
1/2 C milk
Salt & black pepper to taste
2 TBS butter
2 eggs, separated
Mash fully-cooked and peeled potatoes with the milk, salt, black pepper and butter. Beat two egg yolks well; fold into the mashed potato mixture. In a bowl, beat two egg whites until stiff peaks form; fold into the potato mixture. Pour entire mixture into a greased casserole dish. Bake at 350-degrees F for about thirty minutes, or until the mixture is puffed and browned. Serve hot.
