Oven Pancakes
4 eggs
3 C milk
2 C flour
4 TBS butter, melted
1 tsp. salt
2 TBS sugar
Beat the eggs in a bowl; add the milk, flour, butter, salt and sugar. Pour mixture into an un-greased baking pan (9"x13"); bake for about twenty-five to thirty minutes at 425-degrees F. Cut into squares and serve with more butter and syrup.
Suggestion: Serve Flaskpannkaka with Artsoppa (Yellow Pea Soup).
Variations: The pancakes can also be served with a berry and cream topping (1/2 pint cream, whipped, with 1 jar of berry preserves); or cream mixed with brown sugar; or bacon (omit butter and cook three strips of cut-up bacon until crisp; place drippings and bacon into baking pan, pouring the batter on top. Bake at 375-degrees F for thirty minutes).
