Orange Sweet Potatoes

Place sweet potatoes in a tall cooking pot; cover with water. Bring to a boil. Reduce heat; cover and simmer for about twenty-five to thirty minutes, or until sweet potatoes are tender. Drain. When potatoes have cooled, peel and cut into 1/2" slices. Peel and slice oranges after grating two tablespoons of rind; discard the remaining rind. Coat a 3-quart baking dish with non-stick cooking spray. Arrange potato slices on bottom of casserole dish, followed by a layer of the sliced oranges.

 

In a saucepan, combine brown sugar, cornstarch, salt and cinnamon. Stir in orange juice, honey, butter, water and orange peel. Bring to a boil; cook and stir for about two minutes or until mixture thickens. Pour over the potatoes and orange slices. Bake, uncovered, at 350-degrees F for about twenty minutes or until heated through. Serve.

 

Shenanchie's Note: If you can find seedless oranges at a reasonable price, their use in Orange Sweet Potatoes is preferred.
