Oatmeal Cookies
1 1/4 C butter or margarine, softened
3/4 C brown sugar, packed
1/2 C granulated sugar
1 egg
1 tsp. imitation vanilla
1 1/2 C flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
3 C rolled oats
Non-stick cooking spray
Heat oven to 375-degrees F. Lightly coat a cookie sheet with non-stick cooking spray, or use a non-stick (Teflon) cookie sheet.
In a bowl, beat together butter or margarine with brown and granulated sugars until mixture is creamy. Add egg and vanilla; beat well.
In another bowl, combine flour, baking soda, salt and spices. Add the flour mixture to the butter/sugar mixture and blend well. Stir in oats. Drop the dough by rounded tablespoons onto cookie sheet. Bake eight to nine minutes for chewy cookies, or ten to eleven minutes for crisp cookies. Remove from oven and allow cookies to cool before serving. Repeat process with remaining dough, or use multiple cookie sheets to bake larger quantities at the same time.
After cookies are completely cooled, store leftovers in a covered container.
