Spicy Fritters
2-1/4 C flour
1-1/2 tsp salt
1 tsp. curry powder
1 tsp. baking powder
3/4 tsp. black pepper
1-1/2 C water
1/2 C watercress, chopped
3 green or red chilies, finely chopped
2 large green onions, chopped
1 tomato, chopped
Oil for frying
In a bowl, combine all ingredients (except oil); mix to form a smooth paste. Pour about one inch of oil into a large skillet over medium heat. Once oil is hot, reduce heat to medium-low. Drop batter by tablespoonfuls into oil, using a spatula to create elongated shapes. Fry the fritters, turning frequently, until golden brown on all sides. Remove fritters from oil and drain on paper towels. Serve hot.
